One of our favorite ways to eat potatoes. It’s a simple dish, that packs big flavor. We cube gold potatoes and toss them in salt, pepper, oregano, & olive oil. Then they are spread out in an even layer on a roasting pan and then pool of our rich chicken stock (made with roasted bones and feet) is poured into the pan. Roasted at high heat, the potatoes soak up all the stock on one side while the other starts to get some color. Given a little flip towards the end, and you end up with a showstopper of a potato.
