This is probably our favorite cut of pork. Coppa comes from the shoulder/neck of the pig. If you have ever had the Italian deli meat capicola, it is the same cut. We get ours from Firsthand Foods. We cure them overnight with a mix of salt, sugar, and herbs, give them a kiss of smoke, and finish on the grill. They are tender and have fat marbled throughout. These beautiful steaks come with a side of Ratatouille.
