This tender salad hits so hard. Swiss chard is like the big brother to spinach in my mind. It’s more durable and heartier. There is a slight bitterness to it, but a vinaigrette will cut right through that. Using the whole leaf and its stems, we dressed it in olive oil & sherry vinegar and tossed it with sliced shallots, golden raisins soaked in lemon juice, toasted pinenuts, & manchego.
Dressing is on the side. This salad does not make good leftovers once dressed.
This salad is ideal as a side for 2 or a lunch for 1.
