This North Carolina heat is something this year. Last week's heat dome really pushed us to the limits while we were slingin' hot dogs on the 3rd at The Pushcart X Sol House pop-up. These hot days call for some lighter, refreshing meals. This gazpacho is simple, yet complex in its flavors. Made with a bounty of farmers' market tomatoes, cucumbers, garlic, peppers, and sherry vinegar. We are gonna serve it with some croutons made out of some fantastic gluten-free bread from Guglhupf, and a chunky relish of tomatoes, roasted garlic, salted cucumber, and shallots.
